Cooking with Momma: Enchiladas Rojas

My Amig@s at Multicultural Familia are celebrating Hispanic Heritage Month this week.
I decided to show our Hispanic Pride as well.
I’ve recently came upon a lot of Hispanic food products and have been cooking up some pretty tasty meals.
The kids helped out this time as we made Enchiladas de queso(cheese enchiladas), frijoles con chorizo (beans) and of course dad had to add his flavor to our dish… Chicken Wings! JAJAJA! The combo might have not been one you’ve ever seen but needless to say it was all delicious.

Little man was a pro at helping me roll the Enchiladas. Little lady just kept eating the cheese! I don’t blame her it was delicious.
Our meals may not be done or served the traditional way my family would have done them but the memories our little family is creating are just as special.

P.S. I cheated and used Las Palmas Enchiladas sauce :) I have yet to make these from scratch but I do have an awesome tasty green enchilada recipe. Perhaps i’ll share that someday.
