I grew up eating soups/caldos/stews. My Nana was the queen of sopas, so it’s no surprise I enjoy making them for my family. I clearly remember for Lent my grandmother made caldos for our meatless fridays. I loved I made my family a delicious vegetable rice slow-cooker caldo. Trust me when I say this is one meatless recipe that can’t go wrong!
Let’s make Vegetable Rice Slow Cooker Caldo
The ingredients are simple and can all be found at your local Walmart! I love the produce section at my local Walmart because I can purchase locally grown produce that is guaranteed Fresh!
My Vegetable Rice recipe can be customized to what you like. Since my kids love zucchini I made sure to add more of it than any other veggies. I also included corn, potatoes, carrots, onion, tomato, and celery. My Nana loved adding chayote and cabbage but I passed on those veggies. Feel free to make your caldo according to what your family likes!
While this is typically a meal cooked on the stove I love being able to set my dinner and walk away!
- 3 medium potatoes
- 3 medium zucchini
- 3 medium carrots
- 1 small onion
- 4 corn on the cob- mini ears
- 5 small celery stalks
- 1/2 a large tomato
- 1tbs vegetable oil
- 4 tbs Knorr chicken bouillon
- 8 cups of water
- 1 cup of long grain rice
- Chopped cilantro and Limes for garnish
- Dice all your veggies
- Add 8 cups of water to your slow cooker
- Mix in your Knorr chicken bouillon and vegetable oil
- Set your slow cooker to high and cook for 8 hours
- half way thru cooking add your rice, stir, and continue to cook.
- You can substitute chicken bouillon with salt and pepper
TIP: You can also substitute the long grain rice with brown rice just keep in mind that the brown rice does take a little longer to cook.
When your veggies and rice are tender your slow cooker caldo is ready to serve!
Garnish with chopped cilantro and a squeeze of lime and serve with warm corn tortillas! This is such a great meatless recipe for the whole family! We hope make it and your family enjoys it as much as we do!
