Watermelon has always been Little Man and Little Lady’s favorite summer fruit! Last year I made them fresh watermelon water and popsicles to beat the summer heat this year I wanted to put a little spin to our typical agua fresca.
Ingredients ⎮Yields about 2.5 qts⎮servings 5 (16oz)
- 1/2 of a medium sized watermelon
- 2 cups of fresh raspberries
- 1 cup of sugar
- the juice of 1 whole lemon
- 1 cup of water
- 3 cups of cubed ice
How to make a Watermelon Raspberry Cooler
Cut your half of watermelon into cubes that fit your blender
Add to your blender with 1/2 cup of sugar
Blend until smooth
Add the juice of your lemon it’s ok to hand squeeze or use half of the lemon if it’s really juicy
Pour into a pitcher be sure your pitcher can hold at least 3 qts
Add 2 cups of cubed ice, fresh raspberries and 1/2 cup of sugar
Blend until smooth
If you don’t like a lot of pulp be sure to strain your watermelon juice into your pitcher and discard the pulp for the watermelon this is optional.
For the Raspberry puree, Straining helps catch all the seeds. Strain your raspberry into the watermelon juice and stir. The raspberry will be a lot thicker because of the ice take your time with a spoon passing it thru.
Refrigerate until ready to serve. Add a cup of cubed ice to keep it nice and cold.
Make your cooler kid friendly by adding some fruit on a stick!
