Chicken Chilaquiles #CookClassico

It’s no secret that Most Authentic Mexican food isn’t the healthiest though very delicious! This year I’m making it a great effort to get good foods into our bodies and in the process make Healthier versions of my most beloved  Mexican dishes. I know there needs to be a change in the way we eat, at least for my family.

My first task was changing the famous plate of Chilaquiles (CHILL-AH-KILL-ES) for a healthier option without compromising taste! Chilaquiles are fried triangular corn tortillas simmered in sauce and garnished with a variety of ingredients.

I created Chicken Chilaquiles for the family without frying but rather baking the corn tortilla triangles.
I also opted for Classico tomatoes because they give that perfect fresh taste we need to make this dish. My family loves the fresh taste of tomatoes in this dish so it was important not to lose that flavor.  It doesn’t hurt that Classico canned tomatoes are 100% all-natural and always packed fresh with no preservatives.
I think we are on the right track for a healthier meal already!

Ingredients for Chicken Chilaquiles:

1-Classico Crushed Tomatoes |  2- Classico Heavy Tomato Puree |
3-Chile Poblano |4- Chopped Green Onions | 5- Corn Tortillas|
6-Chicken Breast | 7- Sour Cream | 8-Queso Fresco

Let’s make Chicken Chilaquiles!

Preparation:

•Cut 10 corn tortillas in 8ths
•Chop about 1/2 a cup of green onions
•Cut 1 chicken breast in thin strips and season for taste.
•Cut 1/4 of chile poblano* into long strips

•Crumble your queso fresco** and refrigerate
*Chile Poblano is for taste the more you add the spicier your dish will be. You can also substitute for your favorite chile of choice.
**You can also substitute the queso fresco for Monterrey Jack cheese.

Directions:

-Place tortilla triangles on a baking sheet that’s been lightly coated with cooking spray. bake at 350 degrees F for 20 minutes. Turn over at 10 minutes to bake evenly. Remove from heat and set aside.

-At medium heat, in a pan lightly coated with cooking spray, cook your chicken strips. Stirring constantly, cook chicken halfway and add 1 cup of Classico Crushed Tomatoes. Bring chicken to a simmer and add Chiles poblano slices. Season for taste, Bring to a simmer again. Once chicken is thoroughly cooked, remove from fire, cover and set aside.

-In another pan add 1 can of  Classico Heavy Tomato Puree and 1 cup of Crushed tomatoes. Season for taste. Bring to a simmer.

– Add baked tortilla 8ths to the sauce at medium low and stir occasionally. Cook until Tortillas are soft but not mushy.

-Plate the tortillas in the sauce and top with some chicken.

-Garnish your dish with sour cream, queso fresco, and green onions to your liking!

I hope you enjoy this dish of Chicken Chilaquiles. My family enjoyed this healthier version of Chilaquiles.  We had all the great flavors of tomato without missing the fried tortillas.
