The Big Game day is near! We are excited to have the big game come to NY/NJ this year and what better celebration then to make our favorite buffalo chicken recipe for game day food!

The hubs and I fell in love with Buffalo Chicken Dip in San Diego when we attended our friend’s party and since then this recipe has been made plenty of times. While we love this recipe just as a dip eating it as a chimichanga was amazing and has even become a new favorite in our home! With just 6 ingredients you have a buffalo chicken  party in your mouth!

Here is what you need to make Buffalo Chicken Chimichangas

3 cups of mild Cheddar and Sharp Cheddar Cheese mix

Directions:

1- In a oven safe dish, place your shredded chicken breast. Drench the chicken in Frank’s RedHot sauce. We use appx 3/4 of a bottle or until the chicken is nice and coated in the sauce and set aside.

TIP: For a kid friendly dish only use half the bottle the less you use the less spicy these chimichangas will be

2- In a microwave safe bowl, place the cream cheese with 1/4 cup of blue cheese dressing and microwave in waves of 10 seconds until cream cheese dressing mixture is soft and able to be mixed.

3- Spread the cream cheese dressing mixture over your chicken and spread evenly.

4- Spread shredded cheese generously. 3-4 cups is a great amount you can never have too much cheese the more the cheesier.

5- Cover your dish with foil paper and  cook in over at 350 degrees for appx 25 minutes or until cheese is melted. Uncover and carefully mix it all until combined.Cook for an additional 10 minutes uncovered. Remove from oven and let it stand until cool.

TIP: This is the finished product of our delicious Buffalo Chicken Dip! Serve with Tostito Tortilla Chips and enjoy OR Continue with our recipe to make this dip into delicious chimichangas!

6- Heat tortillas until warm to prevent breakage and set aside.

7-Taking a generous amount of buffalo chicken dip place in middle and fold!

8-There is no right or wrong way to fold your chimichanga I prefer folding up, folding sides and then folding down the best!

9- In a pan at medium heat place some vegetable oil and fry the folds down first until you begin to see a golden brown. You just want to achieve a great crunch. Flip over once and wait for that golden color once again. Remove from heat and place on a paper towel plate.

10- Once cooled cut your chimichangas diagonally. Place on a platter and serve with sour cream or any other delicious complementing dip!

Serve these delicious Buffalo Chicken Chimichangas at your Game Day Celebration!
