Mini Pumpkin Sopes with MASECA #MasecaNosGusta

Halloween is already next week so we are in full swing of themed foods, crafts and activities in our home. I find that having the kids get creative really builds our best memories every year.
 
Recently, the kids and I got really creative in the kitchen to make some easy Mini Pumpkin Sopes! We decorated them just like we would any pumpkin except we used delicious food for all the face! They turned out so delicious the hubs had them for dinner too!
 
To make these super easy Mini Pumpkin Sopes You will need:
Maseca- Instant Corn Masa Flour, Water, salt, food coloring, Cookie cutter pumpkin shape, food toppings!
 
First Little Man and I had to make the dough.

Here is what we used:
MASECA- Instant Corn Masa Flour- 2 cups
Water- 1 and 1/2 cups
Salt- 1/4 tsp Optional (we had savory toppings so we didn’t add salt)
 
Combine your dough ingredients BUT. Before adding the water add some orange food coloring or combine yellow and red to get the perfect orange color!

You will end up with this beautiful orange dough

Cut the dough in two parts and roll until evenly flat leaving it slightly thicker than a tortilla.

Cookie cut all the pumpkin shapes you! Little Lady was awesome at cookie cutting all our pumpkins!
 
Repeat with the second half until all your dough is used or you have made enough. To cook prepare a lightly oiled pan and cook your mini pumpkins thoroughly.

Once they are fully cooked it’s time to decorate!
 
To decorate our pumpkins we used Chorizo beans for the base, Queso Fresco for the triangle eyes, Green Pepper for our upside down triangle nose, and Corn for the mouth! The options are tremendous use your favorite veggies to decorate your own mini pumpkin sopes!

Little Man and Little Lady each decorated their own pumpkin and then it was time to enjoy!
