Quick and Easy Lunch- Chicken Caesar Tostada

Lunch is my least favorite meal. I’m usually running late to eat, I’m indecisive, and have some leftovers that guilt me into eating them again or trashing them on trash day. Since I’m home, I want to make the effort of cooking or making something at home rather than waiting until I have to pick up the kids from school. This week I hustled into the kitchen and discovered a new favorite, Chicken Caesar Tostadas! 

I’ve been trying new products available at Walmart it’s really helped me discover food brands and foods I wouldn’t usually pick up on my shopping trips. I usually post about new finds on Instagram I tag it #WalmartFind

We received a bag of Trains, Planes, & Automobiles pasta (Great for another themed school lunch for the kiddos), WishBone EVOO Sundried Tomato dressing, Skippy P.B. Bites (another great lunch snack for the family), Mae Ploy Sweet Chilli Sauce (which is great for dipping I’ll share more next time), Lee Kum Kee Sriracha Mayo, Smuckers Fruit and Honey (Stay tuned for a sweet dessert perfect for brunch or sunday mornings) and two Hidden Valley products from their new Greek Yogurt line- Ranch mix and Creamy Caesar Dressing! Talk about yummy new #WalmartFinds

I went with the Hidden Valley Greek Yogurt Dressing for my quick and easy lunch!

We recently had leftover baked chicken, a sad half lettuce head, and tostadas that were  going to be turned into chips for dip! I’ve been on caesar salad kick and though I’ll just make a salad. I didn’t have enough lettuce for an actual salad and I was out of croutons. I figured If I combined my leftover shredded chicken with some of the new Hidden Valley Yogurt Caesar Dressing and had it over a tostada it would be a nice quick and easy lunch. You guys, I had not one but two tostadas and one the second one I added some avocado! DELISH! chicken caesar salad- leftover lunch made easy

Go easy on the dressing or just drizzle over your build tostada for a more controlled portion. I enjoyed every bite of the new dressing.

Make a Chicken Caesar Tostada

Chicken Caesar Tostadas

Ingredients
  1. 1 cup of shredded lettuce
  2. 1 cup of shredded rotisserie or baked chicken
  3. 2tbs grated parmesan cheese
  4. 4-5tbs of Hidden Valley Greek Yogurt Creamy Caesar Dressing
  5. 3 tostadas
  6. avocado- optional
Instructions
  1. Combine lettuce, chicken and Caesar dressing into a bowl and mix well.
  2. Layer salad mix over a tostada.
  3. Top it with a sprinkle of Parmesan cheese
  4. optional slice avocado over top.
  5. Enjoy!
