Slow Cooker Recipe: Chicken Mole

During the winter I try to make easy meals for the family. I stay home with the kids but i’m a working mom so making meals from scratch all the times can be hard. I love my slow cooker and really  it can’t get easier than a slow cooker recipe! Sadly there are hardly any Mexican dishes cooked in the slow cooker so I decided to make chicken mole! The results were fantastic!

To make this easy slow cooker recipe you will need:

Ingredients:
4-Boneless Skinless Chicken Breast
1- Doña Maria Mole Sauce
1- Carton of Chicken Broth

All our ingredients were purchased at Walmart. Two of our ingredients were Walmart’s Great Value brand  this recipe is not only delicious but so affordable.

To make Slow Cooker Chicken Mole

Directions:
1- Scoop the Doña Maria Mole paste into your blender. Add 3 cups of chicken broth.
2- Blend and check for no clumps.

3- Add your chicken into the slow cooker. We used 4 frozen chicken breast.
4- Pour the mole sauce over it and cover.
5-Cook on High for 5-6 hours

TIP: Check your mole at the middle mark of cooking an approximate 2.5-3 hours into cooking. Give it a stir. If it seems too think add about 3/4 of chicken broth, mix and cover.
6- Your chicken mole is done when the chicken is tender and can easily be shredded with your utensil.

We recommend this dish served with a Mexican Rice. 
To make Mexican orange rice you will need:

Ingredients:
1/4 cup of vegetable oil
3/4 of a small tomato sauce
1/ 1/2 cups of long grain rice
3 cups of Chicken Broth
1 tbs of Knorr Chicken flavored bouillon (optional)

To make Mexican Orange Rice

Directions:
1-Heat the oil and add the rice. Fry the rice until it starts to get a light golden or brown color.
2-Add the tomato sauce and stir.
3-Add the Chicken stock and chicken bouillon.
4-On medium high heat bring to a boil, cover your pot and cook at low.
4-Cook for approximately 30mins or until rice is light and fluffy and taste fully cooked!

Serve and enjoy!
