I recently shared how much I love make ahead meals and a good slow cooker recipe! I showed you how I made my Make Ahead Meatballs and froze them to use for family meals during the week. Today I share just one of the slow cooker recipes I like using my make ahead frozen meatballs for, Albondiga soup! That’s right, Slow Cooker Albondigas using my homemade Frozen Turkey Meatballs!

The reality is I’m a busy mom. I work from home but i’m still a wife and a mama! I love cooking but I don’t often have time to babysit my meals so it’s easier to plan ahead and using make ahead steps and the slow cookers help is a life saver!
Let’s Make Slow Cooker Albondigas
Albondigas can be made with different types of meatballs traditionally I grew up eating beef meatballs. My family however, enjoys the the turkey meatballs best. I can’t taste the difference!

- 10 Frozen Turkey Meatballs
- 1-12oz pk Frozen Carrots
- 1 cup Diced Tomatoes
- 1/2 of an Onion, Diced
- 3 Potatoes, Diced
- 1/2 cup Long Grain Rice
- 3TBS Chicken Bouillon
- Salt to taste
- 10-12 cups of Water
- Cilantro
- Lime
- Ground Oregano
- Add all your ingredients into a slow cooker with 10 cups of water and stir
- Cook at High for 4-5 hours or until meatballs are fully cooked.
- If soup is too thick add another 2 cups of water and stir.
- Taste for salt and add accordingly.
- Garnish with fresh cilantro and a squeeze of lime

Add ingredients into Slow Cooker to make Albondigas
Add tomatoes and onion into slow cooker.
Add the rice, potatoes, and chicken bouillon.
Add the carrots, meatballs and 10 cups of water.
Cook at high for 4-5 hours or until meatballs are full cooked.

Garnish with Cilantro and a squeeze of lime and enjoy!
The best part of these Slow Cooker Albondigas is being able to cook a childhood favorite for my family in a new way without compromising flavors. It takes a little longer but there’s no need to babysit dinner. Just simply set up the slow cooker, set a timer, and walk away.
