5 Ingredient Chicken Stir-Fry

The busiest time of the year is fast approaching. With active elementary kids, a college student husband, and holidays I need all the help I can get in the kitchen! This is why making simple meals that require 5 ingredients or less and take less than 30 mins took cook is great!

One of our favorite simple meals for the family is chicken stir-fry. I usually put a pot of white rice to cook before I get started because it takes about 30 mins to cook. That gives me enough time to prep and cook my main dish!

Chicken Stir-Fry Recipe

I like to pick up all my ingredients on the weekend for the whole week at my local Walmart. I love the MarketSide Sesame Ginger Dressing for a quick sauce for our stir-fry. The best part is choosing and mixing up the type of veggies you include in this dish. I like buying the already mixed stir-fry bags of veggies. Frozen or fresh is just personal preference. I like having a huge bag of frozen veggies during our busy schedule because it allows me to make this meal in the spur of the moment. In other words when the hubs and I forget to plan a meal for the day. Hey it happens!

Ingredients
  1. 3 chicken breast cubed (appx 2.5 cups)
  2. 1 cup Marketside Sesame Ginger Dressing
  3. 4 cups Mixed Stir-Fry Veggies
  4. 2 tsp cornstarch
  5. 4 tbs vegetable oil
Instructions
  1. Mix cornstarch with Sesame Ginger Dressing.
  2. Add vegetable oil to a pan or wok at medium high heat.
  3. Add veggies and sauté for 3-4 mins place in dish and set aside for later.
  4. Add chicken and 1/2 cup of dressing mixture cook until well done.
  5. Add veggies and remaining dressing mixture and toss until well combined.
  6. Remove from heat and serve.
Notes
  1. If chicken releases too much liquid drain chicken before adding veggies and dressing.

Making the sauce for this stir-fry is so easy and so delicious. You can use the dressing straight out the bottle but I really like having a thicker sauce so I add a little cornstarch to thicken it.

I sauté the veggies in a little vegetable oil and remove from the pan to add to the chicken later.

When I cook the chicken I use the same pan and I like adding half of the sauce to lock in some flavor while it cooks. If my chicken renders too much liquid I drain out the liquid before adding the veggies.

I add the veggies once the chicken is well done. It helps to have the chicken cut into small cubes. I add the remaining dressing mixture until well mixed.

I love this easy recipe because it’s perfect for make ahead or last minute family dinner. I serve it over rice and the family loves it!
